If you need to hide content from Admins in your project you can either:

Create a new fileroom. All Admins will see all content and be able to edit all. If you move them out of the Project Admin role they don't have access to Permissions or Settings.

Create a new project. Only the people you invite to your new project will be able to see it's content.
